You could take a photo every five minutes, to every hour to every day. In this case it would be most likely to take a photo every hour as it is showing a large building in New York been built.
Here is another example of a time lapse, here is it shows a pint of beer that has been left. People do this a lot with food and drink products to see what happens after been left for days, to answer questions like will it go mouldy? or what will it look like? With this time lapse it has been took daily and the beer ended up going mouldy.
